Cauliflower Sushi Recipe

Ingredients:
• 1 head of cauliflower
• 1 tablespoon rice vinegar
• Nori sheets (seaweed)
• Your choice of fillings: smoked salmon, avocado, cucumber, cream cheese, etc.
• Soy sauce or tamari for dipping

Instructions:

  1. Grate or process the cauliflower into rice-like granules.
  2. Sauté the cauliflower rice in a pan for a few minutes until tender, then mix in the rice vinegar. Let it cool.
  3. Lay a nori sheet on a sushi mat or a flat surface. Spread a thin layer of cauliflower rice evenly across the nori.
  4. Add your fillings (such as smoked salmon, avocado, and cucumber) in a line near the edge of the nori.
  5. Roll it up tightly, using the mat to help. Slice into bite-sized pieces.
  6. Serve with soy sauce or tamari on the side.

This sushi tastes amazing and is a great way to enjoy a low-carb version of a classic dish!
