You don’t have to give up your favorite meals—just find low-carb alternatives. One of my favorite swaps is using cauliflower instead of rice to make sushi! It’s just as delicious and much lighter on carbs. Here’s my simple recipe:
Cauliflower Sushi Recipe
Ingredients:
• 1 head of cauliflower
• 1 tablespoon rice vinegar
• Nori sheets (seaweed)
• Your choice of fillings: smoked salmon, avocado, cucumber, cream cheese, etc.
• Soy sauce or tamari for dipping
Instructions:
- Grate or process the cauliflower into rice-like granules.
- Sauté the cauliflower rice in a pan for a few minutes until tender, then mix in the rice vinegar. Let it cool.
- Lay a nori sheet on a sushi mat or a flat surface. Spread a thin layer of cauliflower rice evenly across the nori.
- Add your fillings (such as smoked salmon, avocado, and cucumber) in a line near the edge of the nori.
- Roll it up tightly, using the mat to help. Slice into bite-sized pieces.
- Serve with soy sauce or tamari on the side.
This sushi tastes amazing and is a great way to enjoy a low-carb version of a classic dish!
